The anthocyanins represent the largest group of water-soluble pigments in the plant. These include Roselle calyces (Hibiscus sabdariffa). Roselle calyces contain high amounts of anthocyanins, especially delphinidin-3-sambubioside and cyanidin-3-sambubioside, up to 2.5 g/100 g DW. So, aqueous extracts from calyces of H. sabdariffa present several interests. It’s used worldwide in the production of drinks and is a source of natural food coloring agents. In fact, extraction and purification of bioactive compounds such as anthocyanins from natural sources have become very important for the use of phytochemicals in the preparation of food supplements or nutraceuticals, functional food ingredients and food additives, and pharmaceutical and cosmetic products.
